Jamaican Pepper Shrimp

Pepper Shrimp is a traditional famous street food in Jamaica. Simmered in a flavorful and spicy broth, the Shrimp is traditionally left in its shell with head still intact. The broth is created mainly from the natural juices from the Shrimp and spiced with Scotch Bonnet Pepper. Traditionally this dish gets its beautiful red color from an ingredient called Annatto. Annatto is an orange-red dye obtained from the pulp of a tropical fruit, used for coloring foods and fabric. It is not always easy to source so a substitute that is used in this recipe is food coloring. Feel free to use whichever one you prefer. Warning, these are hot but addictive!
