Sweet and Sour Fish


Ingredients:

 

2lbs Snapper Fish Filet, or any fish filet of your choice, cut into 2 inch pieces

3/4 tbsp Fish Seasoning

3/4 tbsp All Purpose Seasoning

3 tsp Salt

2 tsp Black Pepper

1 tsp Old Bay Seasoning

2 cups Apple Juice or Pineapple Juice

1/4 cup White Vinegar

2 cups Flour

1 small Onion, sliced

1/2  Red Pepper

1/2 Yellow Pepper

2-3 tbsp Brown Sugar

1 Lemon

3 cloves Garlic, minced

2 tbsp Cornstarch

Oil

4 sprigs of Thyme (optional)

Red Food Coloring (Optional)

 

Directions:

 

Wash the fish fillet using Lemon juice and cool water.

Pat dry of any excess water and set aside.

                

In a small bowl combine the All Purpose Seasoning, Fish Seasoning, Old Bay Seasoning, 1 tsp Black Pepper and 1 tsp Salt. Sprinkle each Fish fillet generously on both sides using seasoning mix. Set aside any remainder of seasoning mix.

Preheat a skillet with enough oil to cover each fish fillet half way.

In a separate container, add the flour and combine with 2 tsp Salt, 1 tsp Black Pepper and the remainder of the seasoning mix, if you have any leftover.

Drench or coat each piece of fish properly in the flour mixture, shake off any excess flour, and add to the oil to fry once its fully heated. Do not overcrowd your pot. You may need to split them up into batches. For some extra added flavor, add the Thyme directly to the oil, but be careful as the oil will start to splatter as soon as you add the Thyme (Optional).

Fry the fish on each side until golden or for about 4-5 per side, and remove from oil to drain.

In a separate skillet add enough oil to coat the pot. You can use some of the oil used to fry the fish for some extra added flavor. Add the Onions and peppers, over a medium heat and sauté. If you have homemade green seasoning or fresh blend, feel free to add about 1 tbsp for some extra added flavor (optional).

Now add the garlic, while stirring occasionally and to prevent it from burning quickly, and then the Apple/Pineapple Juice. You can use any of the juices listed.

Add the Vinegar and about 1-2 drops of Red food coloring. Add small amounts of the food coloring until the sauce is at your desired color (optional). If your prefer not to use food coloring you can substitute it with about 1/2 cup of Ketchup.

Lower your heat to low and now add the sugar. Add 1 tbsp at a time until the sauce is at your desired sweetness. You want to still be able to taste a hint of the vinegar so be sure not to add too much sugar. 2-3 tbsps or so should get the job done!

In a container mix 2 tbps cornstarch with about 1- 1 1/2 tbsps of water. Be sure to mix properly.

 Add the Cornstarch mix to sauce while stirring to prevent any lumps for forming. This should help to thicken up the sauce a little.

Return your heat back to medium and add the fried Fish filets. Ensure that each piece of filet is coated nicely with the sauce and simmer for about 5 mins. 

Remove the fish from the heat and serve right away with your favorite sides.
