Jamaican Pepper Shrimp

Ingredients:

2lb  Shrimp (with head on), thawed

2 tsp Fish Seasoning

1/2 tsp Salt

1/2 tsp Black Pepper

1 tsp All Purpose Seasoning

2 cloves Garlic, minced fine

1 small onion, diced small

4 sprigs Thyme

1-2 Scotch Bonnet Peppers, diced small

2 stalks green onions, diced small

Oil

Red Food Coloring (optional)

1 tbsp Butter

 

Directions:

 Devein your Shrimp by using a knife to go deep enough under the vein of the Shrimp and make a small hole or incision close to the head from the back of the Shrimp. After doing this,  a piece of the vein should be sticking out, use your finger to gently pull it out. Do not remove any of the shell from the Shrimp as this needed for flavoring and this dish is traditionally made with the shell and head still intact.

 

Wash your Shrimp using cool water and lemon juice.

Season using the Fish Seasoning, All Purpose Seasoning, Salt, Black Pepper, Garlic, Onion, Green onions, Thyme and Scotch Bonnet Pepper. If you have a blended seasoning on hand such as green seasoning, epis, etc, then feel free to add a tablespoon  if you’d like. 

Combine all ingredients evenly.

Heat a skillet over a medium heat and add enough oil to coat the pot. 

Pour the seasoned Shrimp in the pot and stir constantly.

Add a little water to the bowl that the Shrimp was seasoned in and swish it around to grab any excess seasonings that was left in the bowl. Pour in the pot with the Shrimp and cover with a lid.


In a container add about 1 cup of water and about 2-3 drops of Red food coloring to it. This step is optional. If you prefer not to use the food coloring you can skip this step. The purpose of the food coloring is to give it a nice deep red color which makes this dish even more appealing to the eye. Combine the food coloring with the water and add to the Shrimp along with 1 tbsp Butter. 


Cover the pot and allow to cook for an additional 5 mins. The Butter should help to thicken up the sauce a bit while adding flavor.

Serve and enjoy with your favorite sides!
