Sweet & Spicy Salmon Bites

2lbs Salmon Filet, cut into bit sized pieces

 Sauce:

1/2 cup honey

1/4 cup soy sauce

1 stall green onion

Salmon Seasoning:

2 tsp fish seasoning 

1 1/2 tsp paprika 

1 tsp old bay seasoning 

1 tsp all purpose seasoning 

1 tsp dried thyme

1 tsp Cayenne Pepper or you can use any amount of Scotch Bonnet Pepper

Salt

Oil 

 

 

You can use Salmon with/without the skin, this is your choice.

Wash the Salmon using cool water and Lemon juice.

Pat the Salmon dry of any excess water and season using all seasonings listed under “Salmon seasoning”.

Sprinkle a little oil on the seasoned salmon also to help the seasonings to marinate and come together. Set aside.


In a separate bowl combine all ingredients listed under “  Sauce”. Set aside.

Place a skillet over a medium heat. Pour in a generous amount of oil to coat to the pot and to help to prevent the salmon from sticking. Allow the pot to fully heat.

Add the Salmon in an even layer, ensuring that none is on top of each other, and allow them to cook for about 3 mins per side or until each side is nice and golden. Be careful when turning these as they may break apart easily if you don’t allow them to cook long enough and use a tong or spatula preferably to turn them. Try not to stir them using a spoon either.

 

Once the Salmon have been cooked, pour over prepared sauce and occasionally turn them over using a spatula.

Allow the Salmon to cook in the sauce for about 5 mins then remove them from the heat.

Serve and enjoy with your favorite sides!
