If you’re like me, then your meal isn’t complete without some sort of Vegetable side. As a child growing up I wasn’t a fan of vegetables. It wasn’t until I became an adult and learnt of different ways of how to prepare them that I really started enjoying veggies. Off course, knowledge increases with age and so we learn of the importance of vegetables as we grow.
Broccoli is considered a superfood as it is loaded with fiber, antioxidants and Vitamin C. It may also support heart health. Broccoli is a universal vegetable that is enjoyed by most people and can be used in almost any dish and enjoyed in many different ways. Potatoes are starchy vegetables that is also packed with nutrients and antioxidants. Like Broccoli they are extremely versatile and can be very filling. They are also considered to be naturally gluten free. Off course for nutritional reasons it is always encouraged that we have a healthy balance of all the foods we eat. You can swap out these veggies and use your favorite or preferred veggies. Your choice! Checkout the quick and easy recipe below:

Ingredients:
3 medium sized Yellow Potatoes, cubed
1 large head or 2 cups of Broccoli, chopped into bite size pieces
1 1/2 tsp All Purpose Seasoning
1 tsp Vegetable Seasoning
1 tbsp Garlic Flavored Butter
1 tbsp Salted Butter
Oil
1 tbsp Chicken/Vegetable Bouillon (Optional)
Salt (optional)
Directions:
Prep your Potatoes first since they will take longer to cook.
Place a medium pot on the stove with water and bring to a boil.
If using Chicken/Vegetable Bouillon, add it to the water once it starts boiling and then add in the potatoes to boil for no more than 6 minutes. Once they are done remove them from the water and set aside. Do not add any salt to the water as you will be seasoning the veggies later and some seasonings may contain salt. This can result in your vegetables being a little salty. I advise to hold the salt until you finish cooking the vegetables and add some if needed.
Now add the Broccoli to precook also for about 5 mins. Remove them from the water once they are done. You can use Broccolini for this recipe also but I would suggest to skip precooking them as they cook quicker vs regular Broccoli. I used Broccolini, therefore I didn’t precook mine.
Place a skillet on the stove over a medium heat and add enough oil to coat the pot.
Add 1 tbsp of Salted Butter and then add the precooked Potatoes.
Add the Vegetable and All Purpose Seasoning to the Potatoes and stir lightly until they are evenly combined. You may want to use a spatula to do this to prevent your veggies from breaking apart easily once they are fully cooked.
Try not to stir too much also and allow the potatoes to cook a bit on each side. This will help them to develop a nice, somewhat crusty and slightly crunchy texture on the outside while maintaining their cushiony softness on the inside.
Now add the Broccoli to skillet along with the Garlic Flavored Butter. If you don’t have Garlic flavored Butter on hand you can throw in some fresh minced Garlic with a little extra Butter if you’d like.
You can also add about 1 tbsp homemade green seasoning/fresh blend if you have any on hand.
Cover the pot and allow your Vegetables to cook until they are tender. Since they are precooked they should be done in about 5 mins or so. If you used Broccolini like I did the time may take a little longer (about 8 -10 mins).
Taste and adjust your seasonings as needed.
Serve right away with your favorite entree or any way you’d like to enjoy this!
