Ingredients
1/2 of a large Pumpkin or 2lbs of Pumpkin
Coconut oil
1/2 tsp Italian Seasoning
1/2 tsp Vegetable Seasoning
1/2 tsp Garlic Powder
1/4 tsp Black Pepper
Salt, dash
Directions:
Preheat your oven to 375 degrees.
Prep your Pumpkin by cutting it into any shape you’d like. Be sure to make sure the shapes are uniformed and even to ensure the pieces to cook at the same time. You can also peel the entire skin or peel some parts, this is all up to you and how you prefer your Pumpkin. I peeled sections of mine and only left on some parts as I didn’t want to take a chance with having my Pumpkin break apart once they were done cooking.
Place the pieces of Pumpkin in a bowl and season using 1/2 tsp Italian Seasoning, 1/2 tsp Vegetable Seasoning, 1/2 tsp Garlic Powder, 1/4 tsp Black Pepper, a dash of Salt and enough Coconut Oil to coat each piece of Pumpkin.
Coat a baking tray/pan with some Coconut Oil and place each piece in a baking pan or tray face down. If possible use a dark baking pan/tray as this will help your Pumpkin to get a nice charred color once they are done. And place in the oven to bake off 45 mins or until they get nice and tender.
Allow your Pumpkin to cool for about 5 mins before serving with your favorite sides.
