Jamaican Steamed Cabbage

1 small Cabbage or or half of a large Cabbage (sliced or shredded)

1/2 Onion (diced small)

1 small sweet Pepper (diced small)

2 cloves Garlic (diced small)

A few sprigs of Thyme 

2 Green Onions (diced small)

Oil

2/3 cup Mixed Vegetables (thawed)

1/2 tsp salt or enough to taste

1/2 tsp Black Pepper

1 tsp All Purpose Seasoning

1 tsp Garlic Powder

 

Directions:

 

Place a skillet or a dutch pot over a medium high heat and add enough oil to pot to coat it. Add Onion, Sweet Pepper, Garlic, Green Onions and Thyme to the pot and sauté. For about 2 mins. You can remove the Thyme leaves from the stem before adding it to the pot or you can leave it whole, its totally up to you!

 

Add Cabbage and remainder of ingredients to the pot. Stir all of the ingredients, ensuring to combine them all evenly. Lower heat to low and cover pot with a pot lid. You can add a 1/4 cup of water to the pot if you want  to produce some extra liquid but keep in mind that the cabbage will spring some water(optional).

 

Allow cabbage to steam for about 10 mins if you prefer it with a little crunch and about 15-20 mins max if you prefer it more on the tender and soft side. Stir cabbage one last time at the end of cooking to ensure that it is cooked evenly.

 

Serve immediately as a side or by itself and enjoy!

* If not serving immediately cabbage will continue to cook under heat if your pot is left covered with a lid. To prevent your Cabbage from overcooking leave pot partially covered with lid. This will allow the steam to escape from the pot or simply place in a container and remove from pot.
