Jamaican Festival

Total Time:  40 mins

 

Ingredients:

 

1 1/2 cup flour

1/2 cup fine cornmeal 

1 1/2 tsp Baking powder

1/2 tsp salt

1 tbsp vanilla

2/3 cup water

1/4 cup white sugar

Oil

 

Directions:

 

In a bowl combine the dry ingredients first. Add the flour, cornmeal, baking powder, salt and the white sugar. You can use brown sugar if you prefer, but it may cause your Festivals to brown quickly once you start cooking them.

Combine the vanilla with the water and pour into the flour mixture while kneading to form a soft dough. 

Cover container with dough using a damp cloth and let rest for atleast 30 mins.

In a pot place enough oil to cover festivals half way over a medium low heat. 

Place dough in a lightly floured surface and separate into 8-12 even parts. 

Roll each dough into long pieces (they should shape like a sausage or log).

 Place them in the oil to fry for 3 mins per side or until they are golden brown. Depending on the size of your pot, try not to overcrowd the pot. Work in batches if necessary to prevent your oil temperature from dropping. 

 

Drain your festival on a wire rack or plate with paper towel (your preference).

Serve right away and enjoy with your favorite entree.
