Chicken Seasoning:
8 Chicken Drumsticks or 2 lbs of Chicken, cleaned
1/2 tbsp Garlic Powder
1/2 tbsp Chicken seasoning
2 tsp All Purpose Seasoning
1/2 tbsp Paprika
1 tsp Sazon (optional)
1/4 cup oil
1/2 tbsp Ginger, pureed
1/2 tbsp Chili Garlic Paste
Sweet Chili Glaze:
1 cup of your favorite Sweet Chili sauce
2 tsp Soy Sauce
Directions:
Season the chicken using all ingredients listed under Chicken Seasoning. You can leave the chicken skin on, as this will help to keep your chicken nice and juicy, or you can take it off, your choice. Allow the chicken to marinate for at least 4 hours.
Now preheat your oven to 370 degrees.
Place your chicken in a greased baking pan or a lined baking tray. If you pack them closely this can also help to keep them nice and juicy. If you pack them with space in between them this will result in them drying out more quickly and also help to dry the chicken skin out. Arrange your chicken to your preference.
Place them in the oven, uncovered, to bake for 1 hour.
Be sure to baste them every 30 mins with their own juices.
To make the glaze combine the Sweet Chili sauce with the soy sauce and add a small about of water to loosen the sauce up if its too thick.
Baste the chicken using the sweet chili glaze and place back in the oven for 5 mins. Baste the other side of the chicken and place back in the oven for an additional 5 mins.
Remove the chicken from the oven and allow it to rest for 5 mins.
Serve with your favorite sides.
