Ingredients:
4 1/2 lbs of Chicken thighs (with skin)
1 tbsp Chicken Seasoning
1 tbsp All Purpose Seasoning
2 tsp Salt
12 Sprigs Thyme
6 cloves Garlic
1 tbsp Garlic Powder
1/2 tbsp Black Pepper
1 tbsp dried Onion flakes
1/2 tbsp Paprika
Oil
Directions:
Clean chicken thighs by removing excess flaps of skin using a kitchen shear and any excess fat. Wash chicken using vinegar and cool water. Pat dry using a paper towel to remove any excess water as you want your chicken to be as dry as possible. This will help to crisp up the skin during cooking.
You can crush the Thyme and Garlic together by putting them in a food processor or a pestle and mortar. I used my pestle and mortar and poured about 2 tbsp of oil to create a beautiful herb marinade. Also by using my pestle and mortar there were random chunks of each herb in the marinade which will be good for flavor..Set aside.
In a bowl, combine all of your dry spices (Chicken seasoning, All purpose seasoning, Salt, garlic Powder, Paprika and Onion flakes) and set aside.
Sprinkle a generous amount of oil over each chicken thigh and then rub herb mixture all over ensuring that it gets mainly under the chicken skin. Repeat the same step for your dry seasoning mix. Your seasoning should be smooth and not clumpy on your chicken, if necessary add more oil to smooth it out. Allow Chicken to marinate if possible for at least 4 hours.
Preheat your oven to 400 degrees and place chicken on a baking tray lined with parchment paper. Drizzle a little extra oil over each chicken thigh and lightly sprinkle with some Paprika and Chicken seasoning and place in oven.
Bake for about 1 hour 20 mins and ensure that you baste your chicken every 30 mins with its own juices. This will help to crisp up your skin, keep your meat nice and flavorful and most importantly give the chicken a beautiful color once its done.
Allow chicken to rest for at least 10 mins once they’re finished and serve with your favorite sides and sauce!
