Pimento Garlic Cornish Hens


Cornish Hens or game hens are small poultry that can be roasted, fried,baked or grilled to perfection. They are very convenient and absolutely delicious. This recipe is perfect for special occasions and is very easy to make. Dinner won’t disappoint to impress!

Cook Time: 1hour 12 mins

Total Time:  1hour 32mins

 

 

Ingredients:

 

2 Cornish Hens

5 cloves Garlic, minced fine

8 Pimento seeds grounded or 1 tsp Ground Pimento (Allspice Berries)

2 tsp All Purpose Seasoning

2 tsp Chicken Seasoning

1/2 tsp Black Pepper

2 tsp Paprika

2 tsp Garlic Powder

3 sprigs Thyme ( remove the leaves from the stems, discard the stems)

1/4 cup oil

1/2 tsp Salt

 

 

For the Glaze:

 

2 tbsp Soy Sauce (preferably low sodium soy sauce)

1/4 cup honey

 

Directions:

 

You can leave your Cornish Hens whole or you can cut them in half, your choice!

Note: cutting them in half will cut down the cooking time.

 Pat them dry to remove any excess water and set them aside.

 In a separate container combine the oil, Minced Garlic, Thyme, Paprika, Ground Pimento seeds, Black Pepper, Chicken seasoning, Garlic Powder & Salt.

 

Pour the marinade over the Cornish Hens and rub them all over ensuring that you get up under the skin and everywhere.

Allow them to marinate for atleast 4 hours-overnight. The longer they marinate, the more intense the flavors will be.

 Once they are fully marinated, preheat your oven to 370 degrees. 

 Line a baking tray/dish with parchment paper (for easy clean up, this is optional) or grease it using oil/cooking spray and place the Cornish hens on.

 

Place them in the oven to bake uncovered for 1 hour. Be sure to baste them with their own juices every 30 mins.

 While they are baking prepare your glaze using all the ingredients listed under glaze.

 After 1 hour spread the glaze all over the Cornish Hens and place back in the oven for an additional 8 mins. Glaze them again and place back into the oven for an additional 8 mins. Be sure to watch them closely at this point as the Honey may cause them to burn quickly.

Your Cornish Hens should be easy after about 1 hour 16 mins or when the internal temperature hits 165 degrees once a food thermometer has been inserted.
