Jerk cooking is a very important part of Jamaican food and culture and is usually exported wherever Jamaican immigrants make their homes. Traditional Jerk pork is seasoned and marinated with a Jerk Marinade and then grilled to perfection over wood or Charcoal. Not everyone has the luxury of nice warm tropical weather year round while some people may not know how to properly cook on a grill.For whatever your reason is I am here to share this easy Oven Jerk Pork recipe and promise to share a recipe for Traditional Jerk Pork once the Summer warm months start rolling in.

Ingredients :
2 1/2 lbs Country style Pork Shoulder (preferably bone in)
2 tsp Paprika
1/2 tsp Black Pepper
2 tsp All Purpose Seasoning
2 tsp Garlic Powder
4 tbsp Jerk Marinade
5 sprigs Thyme
2 tsp ground Ginger
2tsp dry Jerk rub (optional)
1/4 cup oil
Directions:
In a bowl combine all of the seasonings. If you use homemade Jerk marinade omit the Thyme and ground Ginger. Only use these 2 additional ingredients if you are using a bottled/ready made marinade. To turn the flavors up even more you can add some homemade green seasoning/Fresh Blend (about 1 tbsp should be fine).
Since this is an oven method, if your Pork is a large chunk, you may want to cut it into smaller chunks, if possible, or score the skin side, to ensure the Jerk marinade gets everywhere. Compared to the grill the oven will not give your meat that nice smoky flavor so you definitely want to ensure that your marinade is doing its job taste wise.
Add the marinade to the Pork and rub it all over while massaging it into the meat.
Allow this to marinate for at least 24 hours covered in the refrigerator. The longer this marinates, the more intense the flavors will be. If you want this to marinate for longer than 24 hours then place it in the freezer. If you don’t allow this to marinate long enough, the flavors may not be as great.
Once marination is complete preheat your Oven to 370 degrees and place the pork in a baking dish and cover it tightly with foil paper.
Allow the Pork to cook for 1 hour covered, to help it stay nice and juicy and then remove the foil paper and allow it to continue cooking for an additional 1hour and 30 mins. Keep in mind that the cooking time will vary depending on the weight of your Pork. A safe temperature to eat Pork is 145 degrees when a food thermometer is inserted. Be sure to baste the pork every 45 mins or so with its own juices.
Uncovering the Pork will help it to get some color and also to crisp up the skin a little.
Remove the Pork from the oven and allow it to rest for at least 10 mins before cutting into it.
