Juicy Spatchcock Roast Chicken


Roast Chicken never fails to impress! There's nothing like the aroma of yummy roast chicken. You'll love how easy this recipe is and most of all how juicy and delicious the chicken will be!

Prep Time: 20mins

Cook Time: 1hour 30 mins

Total Time: 1 hour 50 mins

 

 

Ingredients:

 

2lbs whole chicken

Oil

 

 

 To season the chicken:

 

 

1/2 tbsp Garlic Powder

1/4 tbsp ground Ginger

1 tsp ground Pimento seeds (All Spice Berries)

1 tbsp All Purpose Seasoning 

Salt

1 tsp Black Pepper

1 tsp Chicken seasoning 

 

 

For the Compound Butter:

 

2 tbsp Fresh Blend/ Green Seasoning 

1 stick salted Butter (you can use unsalted if you prefer), room temperature or softened

1 tsp Garlic Powder

1/4 tsp ground Ginger

1/4 tsp ground Pimento seeds (Allspice Berries 

 

 

Directions:

 

Cut or remove the backbone of the chicken out by using Kitchen shears.

 

Pat the chicken dry all over to remove any excess water. Set aside.

 Get started on the Compound Butter by combining properly all ingredients listed under Compound Butter. For the Fresh blend you can add a small onion, a few sprigs  of green onions & Thyme, a few cloves of Garlic and a small piece of Scotch Bonnet Pepper (optional), a little vinegar and oil to a blender and blend. See link for a video tutorial on how to make this. If you have your own version of this already (sofrito, epis, green seasoning) please feel free to use it in place of the Fresh Blend. Set aside.

 

In a separate bowl combine all ingredients listed under “ To season Chicken”. Set aside.

 

Now stuff the compound butter under the skin of the breast and spread it all over the chicken breast portion. Try to stuff the entire mixture in there, but if you are not able to, try to get as much in there as possible. This will help to keep the breast nice and juicy while it roasts.

 

Now season the rest of chicken using the season mix that you set aside. Sprinkle this mix all over the chicken while massaging the seasoning into the meat. Sprinkle some oil on the chicken while seasoning it to help the seasonings spread easier. Be sure to season under the thighs and everywhere you did not add compound butter to ensure that your chicken is nice and flavorful once cooked.

 

 

You can allow the chicken to marinate in the refrigerator for 4 hours or you can place it in the oven to bake right away. Its your choice! If you opt to marinate the chicken be sure to remove it from the refrigerator and let it rest or come to room temperature at least 45 mins-1hour before placing it n the oven.

 Preheat your oven to 380 degrees. Place the chicken on a lined baking tray and in the oven bake uncovered for 1 hour 30 mins or until its internal temperature reads 165 degrees when a meat thermometer has been inserted into the thickest part of the chicken. 

Be sure to baste the chicken with its own juices every 30 mins to ensure it stays nice and juicy. 

 

Remove the chicken from the oven and allow it to rest for 10 mins before cutting into it.
