If you’re looking for an easy way to bring real Jamaican flavor to the table, these jerk lamb chops are it. With just a few ingredients and your go-to jerk marinade — store-bought or homemade — you can have a delicious, island-inspired meal that’s full of heat, spice, and smoky depth. Lamb Chops Marinade:
1 1/2 lbs Lamb Chops
2 tbsp of your favorite Jerk marinade
1/4 cup oil
2 tsp All Purpose Seasoning
1 tsp dry Jerk rub
1 tsp crushed Ginger or Ginger paste
1 tsp crushed/minced Garlic or Garlic Paste
1 tbsp Green seasoning/ Fresh Blend (or you can susbstitute with 1/2 small chopped onion and 1 stalk Green onion, chopped)
Honey Glaze:
2 tbsp Butter
Honey
Directions:
Pat dry the Lamb chops of any excess moisture using a paper towel. Tip: You can soak your Lamb Chops, in enough cool water to cover them, and a little vinegar prior to marinating them to get rid of some of the gamey flavor.
In a bowl place the Lamb chops and all ingredients listed under “Lamb Chops Marinade”. You can use your favorite brand store bought Jerk marinade or you can use homemade, your choice!
Cover the bowl using plastic wrap and place in the refrigerator to marinate for about 2 hours. The longer they marinate the more flavorful they will be.
Preheat your grill and ensure to oil the grill grates properly to prevent the Lamb chops from sticking. Now place the Lamb chops on and grill for about 5-7 mins per side or until their internal temperature registers 145 F.
Remove them from the grill once done and allow to rest on a platter.
In a sauce pan melt the Butter and as much Honey as you’d like. You can start with 1/4 cup and taste and adjust it to your desired sweetness.
Allow the sauce to get nice and bubbly over a medium-low heat and then remove from the heat.
Pour all over the Lamb chops and serve right away with your favorite sides.
