4 Chicken Leg Quarters
2 tsp Chicken Seasoning
2 tsp Garlic Powder
2 tsp Paprika
1/2 tsp Salt
1/2 tsp Black Pepper
1/4 cup Oil
2 tsp All Purpose Seasoning
2 tsp Sazon
Glaze:
1/4 cup Soy Sauce
1/2 cup Honey
1/4 cup Ketchup (Optional)
Directions:
Clean Chicken of any excess and wash using vinegar, lime/lemon juice and some cool water.
Pat dry and score horizontal lines going all across the leg quarters. This will allow for the seasoning to get into the meat.
Add the Chicken Seasoning, All Purpose Seasoning, Garlic Powder, Salt, Black Pepper, Sazon, Paprika and oil to the chicken and combine evenly, ensuring that the seasoning gets under the skin and into the scores.
Allow to marinate for at least 4 hours-overnight.
Preheat your oven to 370 degrees.
Line a baking tray/dish with parchment paper and place your chicken on. You can also use foil paper if you don’t have parchment paper on hand, be sure to grease it to prevent your chicken from sticking.
Place the chicken in the oven to bake uncovered once it has been fully heated. Bake for 1 hour and ensure that you baste the chicken every 30 mins with its own juices to prevent it from drying out.
In a bowl combine all ingredients listed under glaze. Add a little water if necessary and some hot sauce for a little kick (optional). You don’t want your glaze to be too thick and not too runny.
After 1 hour set your oven to broil and brush the chicken with the glaze on both sides. Ensure that you place the chicken back in the oven for about 5 mins per side each time you brush the glaze on.
Your chicken should be done after 1 hour 20 mons or when the internal temperature reads 165 degrees, once a food thermometer is inserted.
