Chipotle Chicken Quesadillas

Ingredients:

 

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon oil
  • 1 teaspoon Chicken seasoning
  • 1 teaspoon Chili Powder
  • 1 teaspoon All purpose Seasoning
  • 1/2 teaspoon black pepper
  • 1/2 small can chipotle Peppers
  • 4 large flour tortillas
  • Monterey Jack cheese
  • Gouda Cheese
  • Sour cream and  salsa for serving
  • 2 cloves Garlic
  • 1 cup Chicken Stock
  • 1 small Onion, diced
  • 1/2 of a small Red Sweet Pepper
  • 1/2 of a small Yellow Sweet Pepper

 

Directions:

 

In a blender place the chipotle peppers, chicken stock and garlic cloves and blend until smooth. Set aside.

 

In a large bowl, mix together the diced chicken, chili powder, olive oil, all purpose seasoning, the chipotle mixture from the blender and chicken seasoning and combine until the chicken is evenly coated. Set aside a small amount of the chipotle mixture for later. 

 

Heat a large skillet over medium-high heat. Coat the pot evenly with some oil and add in the onions and peppers to sauté until they become fragrant.


Remove them from the skillet once done and set aside.

Now add the chicken to the skillet and cook, stirring occasionally, until it is cooked through and no longer pink, about 5-7 minutes.

 

Heat a large skillet or griddle over medium-high heat. Pour in a little of the chipotle mixture and spread it around the skillet as much as possible or you can dip the tortilla in the mixture and then place it  in the skillet and sprinkle as much shredded cheese evenly over the tortilla. Top with 1/4 of the chicken mixture and a little of the sautéed onions and peppers. Fold the tortilla in half and press down gently with a spatula.

 

Cook the quesadilla for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown and crispy. Repeat with the remaining tortillas, chicken mixture, cheese, and onions and peppers mixture.

 

Cut the quesadillas into wedges and serve with sour cream and salsa, if desired. Enjoy!
