Ingredients:
2lb Chicken
1/2 tbsp Chicken Seasoning
1/2 tbsp Garlic Powder
1 tsp Salt
1 tsp Black Pepper
1/2 tbsp Paprika
1/2 tbsp All Purpose Seasoning
1/3 cup olive oil
1 tsp Sazon (optional)
2 cups Buttermilk
2 Cups Flour
1 egg (beaten)
1/2 cup Cornstarch
Hot sauce (Optional)
Directions:
Prep Chicken by cleaning it of any excess fat. I used Chicken drumsticks and removed the skin. You can leave the skin on if you prefer. Wash Chicken using cool water and Vinegar. Pat dry using a paper towel for any excess water.
Add Chicken Seasoning, All Purpose, Seasoning, Garlic Powder, Salt, Black Pepper, Paprika, Sazon and olive oil to the chicken and combine. If you left your skin on the chicken ensure that your seasoning gets under the skin for maximum flavor. You can allow your chicken to marinate for about 4 hours if you’d like.
In a separate bowl add Buttermilk, Hot sauce and the egg. Set aside
In another container combine the flour, Cornstarch and about 1 tsp of each seasoning ,with the exception of the Olive oil, used to season the chicken. Set aside.
Dip each piece of Chicken in the Buttermilk-egg mixture, then into the flour, then back into the Buttermilk-egg mixture and lastly back into the flour mixture. Be sure to coat the Chicken properly.
Repeat the same steps for each of your chicken and generously drizzle enough oil over each piece of the coated chicken. Allow your chicken to sit until the coating appears wet or soaked.
Preheat your air fryer for 2 mins at 360 degrees. Spray some kitchen spray on your tray to prevent sticking and add your chicken to the airfryer for 10 mins. Flip your chicken and cook for another 10 mins, at this point you can also drizzle on some more oil if your chicken has any “dry looking” spots. Also keep in mind that larger pieces may take longer to cook. Your Chicken is cooked once it’s internal temperature reads 165 degrees once a food thermometer has been inserted!
Sprinkle a dash of salt on your chicken as soon as you take your chicken out of the air fryer and allow to drain on a wire rack.
