Ingredients:
1lb Shrimp, preferably colossal or large size
1 tbsp of your Jerk Marinade
1 tbsp Fresh Blend or Green seasoning
Oil
Fresh Blend:
Onion
Green Onions
Thyme
Garlic
Scotch Bonnet Pepper
Sweet Pepper
Oil
Directions:
Clean and devein Shrimp if necessary and wash using cool water and lemon juice.
Pat Shrimp dry using paper towel and set aside.
Add all ingredients listed for fresh blend in a blender and blend. Be sure not to blend too much, small chunks of seasoning will help to enhance flavors.
Combine Jerk marinade and Fresh blend or green seasoning with 1/4 cup of oil and pour over your Shrimp. Combine evenly and allow to marinate for at least 30 mins. You can use your favorite bottled Jerk marinade or homemade, whichever. Allow your grill to fully heat and grease plate heavily with cooking spray or oil. This will prevent the Shrimp from sticking.
Give Shrimp one last stir to ensure that they are evenly coated with both the oil and marinade and place them on the grill.Be sure to place them flat and allow them to cook for about 2-3 mins per side and turn. The Shrimp should be ready once they start looking less transparent or Opaque in color. Be sure not to overcook your Shrimp also as this will result in a very rubbery texture and a not so yummy taste.
Remove Shrimp from grill once cooked and serve immediately with your favorite sauce and sides.
