Ingredients:
4 medium sized Potatoes, cubed
1 large Corn, cubed
1/2 stick Butter, melted
1 tsp Old Bay Seasoning
Walkerswood Jerk Seasoning
Heavy Duty Foil Paper
Lemon Juice
Salt
1 tsp Fish Seasoning
1lb Shrimp, preferably colossal or large size
Directions:
In a pot of boiling water add your Potatoes and Corn to cook for 10 mins. You can also add a dash of salt to your water but not too much. Drain and set the veggies aside once complete.
Prep your Shrimp By deveining them, if necessary, and wash using Lemon juice and cool water.
Season Shrimp using 1 tsp fish seasoning, a squeeze of lemon juice and 1 tsp Walkerswood Jerk Seasoning (or any amount of jerk seasoning that you would like). Combine and set aide.
Transfer your corn and potatoes to a bowl if you haven’t done so already. Season using 1 tsp old bay seasoning, 1/2 tbsp Walkerswood Jerk Seasoning, seasoned shrimp and melted butter.
You should be able to get at least 2 servings out of this, spoon the shrimp, corn and potatoes into a big enough piece of foil and wrap It up tightly.
Preheat your grill over a medium heat and allow your Jerk Shrimp Foil Packets to grill for about 20 mins. These shouldn’t take long since the potatoes and corn was already precooked.
Pour some extra melted butter over the shrimp and veggies once they are done.
*If you don’t own a grill you can make these in the oven also, bake them at 370 degrees for 20 mins.
Serve right away and enjoy!
