Brown Stew Salmon Bites

Total Time: 1 hour

Ingredients:

 

1.5lbs Salmon Filet (Skinned)

1/2 tsp Paprika

1/2 tsp Fish Seasoning

1/4 tsp Black Pepper

1/2 tsp Salt

1 Large Carrot, sliced

1 small Onion, sliced

4 sprigs of Thyme

1/2 tsp Ground Pimento or about 8 Pimento Seeds/ Allspice Berries

1 Scotch Bonnet/Habanero Pepper

1 small Tomato, cubed

1 tbsp Soy Sauce

1 tsp Browning (optional)

1/4 cup Ketchup

3 cups water

Lemon

1 small Pepper ( any color of your choice)

1/2 tbsp Brown sugar

2 large cloves of garlic, minced

Oil

Garlic Powder

All Purpose Seasoning

 

Directions:

Wash your Salmon Fillet using Lemon juice and cool water. Pat dry of any excess water.

Cut the Salmon filet into bite sized pieces and season using the Paprika, Salt, Black Pepper and Fish Seasoning. Set aside.

        

Heat a skillet over a medium-high heat with about 2 cups of oil or enough oil to . I used Canola oil but you can use any oil of your choice. Make sure your oil gets really hot before adding the fish to fry. This can help to prevent sticking (if not using a non stick skillet).

Add the fish to the oil and fry for about 2-3 mins per side or until they become a nice golden brown color. You may need to fry them in batches also. Overcrowding your pot may cause the temperature of your oil to drop.

Set the filets aside to drain off any excess oil. You can place them on a wire rack to drain, if you have one on hand. Wire Racks are perfect for draining excess oil or cooling fried foods as they help to prevent your food from getting soggy.

Remove most of the oil from your pot and only leave enough to coat the pot or if you prefer you can use another skillet and add enough of some of the same oil used to fry the salmon to coat the pot.

Allow the oil to fully heat over a medium heat and add the Onions, Tomatoes, Carrots, Thyme, Scotch Bonnet/ Habanero Pepper, Sweet Pepper and garlic to sauté until they become fragrant. 

                            

Tip: I precooked my Carrots by placing them in boiling water to boil for about 6 mins before adding them to the pot. You can do this also just to cut back on the cooking time for your Carrots and to ensure that they are nice and tender once cooking is complete.

Now add the water, Ketchup, Soy Sauce/Browning, Brown Sugar and stir to make your gravy. Also add enough salt to taste, about 1/2 tsp Black Pepper, 1/2 tsp Garlic Powder and about 1/2 tsp All Purpose Seasoning. You don’t want your your gravy too runny or thick, taste your pot and adjust your seasonings as needed. If you have a green seasoning or fresh blend marinade on hand, feel free to add a little to your gravy to boost the flavors even more. If you don’t like Ketchup or prefer not to use it you can omit it all together or use your preferred substitute.

Now add the Fried Salmon Bites to the pot and stir to ensure the gravy has coated each piece. Cover the pot with a lid and allow to cook for an additional 10 mins. This will allow for the Salmon bites to soak up the goodness of the gravy.

Remove from the heat and serve with your favorite sides!
