The Best Jamaican Ackee & Saltfish

Ingredients

 

1 can Ackee, drained 

2 lbs Saltfish (Salted Cod)

1 small Onion, diced small

4 sprigs Green Onions, diced small

1 small sweet Pepper (any color of your choice), diced small

3 cloves Garlic, minced fine

1 small Tomato (optional), diced 

1 tsp Black Pepper

1 tsp All Purpose Seasoning

1/2 tsp Fish Seasoning

5-7 sprigs of Thyme

Coconut Oil

Scotch Bonnet Pepper (Optional)

 

Directions:

In a pot place enough water to cover the Saltfish and bring to a boil over a medium-high heat. Once the water starts boiling, drain completely, add fresh water and place back on the stove to bring to a boil again. You can repeat this step for a 3rd time if you’d like to ensure that most of the Salt is out of the Saltfish but I would suggest that you taste the Saltfish as you go and discontinue doing this step once its “salty” enough to your liking. This point of this step is to get rid of the excess Salt from the Saltfish. Try not to boil out all of the salt completely as a little salt is needed to flavor your dish. 

Once your Saltfish is done boiling, allow it to cool and then break apart or flake the filets into little small bit size pieces and set aside.

 

           

In a skillet place about 3 tablespoons Coconut Oil or a generous amount to coat the pot. 

Place the Onion, Green Onion, Sweet Pepper, Garlic, Tomato and Scotch Bonnet Pepper (Optional) in the pot to sauté for about 3 mins, If you choose to use Scotch Bonnet Pepper, use any amount that you’d like. If you are unable to find Scotch Bonnet Pepper, you can also use Habanero Pepper.  

Add your flaked Saltfish and combine with your seasoning in the pot along with the Black Pepper, All Purpose Seasoning and fish Seasoning. Allow to sauté for about 5 mins. The Saltfish may start absorbing some of the oil in the pot, if this happens just add a little bit more oil in the pot, but not too much.

 

                                

Now add the Ackee to the pot and gently combine it with the Saltfish and seasonings. Be very careful when stirring as the Ackee is very soft and may get mushy very easily. Cover your port and allow your Ackee and Saltfish to saute for an additional 5-8 mins to allow the flavors including the Coconut Oil to come together and marry into each other. 

Serve right away and enjoy with your favorite sides.
