Jamaican Saltfish Fritters


If you’ve never had Saltfish Fritters before, then you are definitely in for a treat. These little bite sized treats is definitely a trip to heaven. With fish and aromatics in every bite your taste buds will definitely be pleased. These can be served as breakfast, snack, appetizer-you name it!

Cook Time: 45 mins

Total Time: 1hr 5 mins

 

Ingredients:

 

1lb Saltfish (Salted Cod Fish)

1 cup All Purpose Flour

1 tsp Black Pepper

1/2 of a small Onion, minced fine

2 stalk Green Onions, minced fine

1/2 of a small Sweet Pepper, minced fine

3 sprigs Thyme, with the leaves removed

1 tsp Fish Seasoning

1 tsp All Purpose Seasoning

Salt (optional)

 

Directions:

 

Prep the Saltfish by boiling it 2-3 times (change your water each time it starts boiling) to get rid of any excess salt.

 

Once done, allow it to cool and remove the bones and skin from fish if there is any. Flake and shred fish into small pieces. Set aside.

 

In a bowl combine the flour, Black pepper, Fish seasoning, All purpose Seasoning, Thyme leaves, Onion, green onion, sweet pepper (I used red and yellow) and about 1 1/4 cup water. You can add a dash of salt if you think you may have boiled out all of the salt from your fish.

 


Now place a skillet on the stove over a medium heat to preheat and add enough of any oil of your choice to coat the pot.

Now spoon in rounded spoonfuls of the Saltfish fritters mixture and fry until golden on both sides.

 


Allow the fritters to drain on a wire rack or a piece of paper towel. 

 

Serve and enjoy right away!
