Jamaican Cornmeal Porridge


Indulge in the warmth and comfort of Jamaican cornmeal porridge, a hearty breakfast dish that combines the rich flavors of cornmeal, coconut milk, and sweet condensed milk. This creamy and satisfying porridge, often spiced with hints of cinnamon and nutmeg, is a beloved Jamaican tradition that brings comfort and nourishment to your morning routine. This porridge brings delight in every spoonful!

 

Ingredients:

  • 1 cup cornmeal
  • 4 cups water
  • 1 cup coconut milk (or regular/ evaporated milk if you prefer)
  • condensed milk 
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla  (optional)
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • Grated nutmeg or cinnamon for garnish (optional)
  • 2 Cinnamon leaves/ sticks

 

 

Directions:

 

In a mixing bowl, combine the cornmeal and 2 cups of water. Stir until it forms a smooth, lump-free mixture. Set this mixture aside.

In a large pot, bring the remaining 2 cups of water to a boil along with the coconut milk and the salt.


Bring to a boil then reduce your heat to medium-low and slowly pour in the cornmeal mixture while stirring continuously. This is important to prevent lumps from forming.

Continue to stir the mixture over a low heat for about 10-15 minutes. The porridge will start to thicken. Allow to cook until the cornmeal becomes smooth or until it reaches your desired thickness. Remember to stir frequently to avoid sticking or burning.

Add as much condensed milk as you’d like, vanilla and the nutmeg to the pot. Stir well to combine all the ingredients.


Taste the porridge and adjust the sweetness and spices if neccessary.

Once the porridge is cooked to your preference, remove it from the heat.

You can garnish it with grated nutmeg or cinnamon for extra flavor.
