Banana Oatmeal Porridge


Oatmeal is a convenient breakfast food that is not only quick , easy and delicious but also has nutritional benefits. Both Oatmeal and Bananas contain insoluble fiber, each of which is good to maintain proper bowel health. Oatmeal is enjoyed year round but can be even more comforting during the cold Winter months. Combined with Banana it is even more cozy and comforting. You’ll definitely love how easy this recipe is and I can guarantee that you will be making this over and over!

Total Time:  30 mins 

 

Ingredients :

 

1 over ripe Banana

1 1/2 cup Instant Oatmeal

1 tsp Nutmeg

1 tsp ground Cinnamon

2 Cinnamon leaves or sticks

3 cups water

1 can evaporated milk

Condense milk

2 tsp Vanilla

1/2 tsp Salt

 

Directions:

 

Place a pot with about 2 cups of water over a medium heat to boil.

In a blender add the Oatmeal, Banana, ground Cinnamon, the entire can of evaporated milk and 1 cup water. Blend for about 1 min. If you prefer your oatmeal more on the coarse side then skip blending the oatmeal and only blend the Banana.

Once the water starts boiling add the Salt and Cinnamon leaves or sticks to boil for about 3 mins. This will help them to begin to release flavor. Though ground Cinnamon is being used, the Cinnamon sticks/leaves will help to add some extra Cinnamon flavor to the porridge.

Now add the oatmeal and banana mixture to the water, while constantly stirring, to prevent lumps from forming. Use a whisk if you must as this can be helpful with preventing lumps from forming. If you chose to skip blending the oatmeal then stir in your oatmeal first and then the banana afterwards. Please note that the cooking time may vary if you choose not to blend your oatmeal also.



Lower your heat to low and stir constantly. Allow to cook for 8-10 mins or until the oatmeal texture appears smooth and creamy. Do not cover your pot also as this may cause your oatmeal to overflow.

Remove the Oatmeal from the heat and stir in the Vanilla, Nutmeg and as much Condense milk as you’d like. The porridge may be naturally sweet depending on how ripe your banana is so it may not need as much Condense milk.

Serve nice and warm with your favorite toppings!
